Preparing the Tomatoes for Canning

  5. Peel and Core the Tomatoes: Once the tomatoes have cooled, use a paring knife to remove the skins. Cut out any hard cores and discard them. Cut the tomatoes into quarters and remove the seeds and juice with your fingers or a spoon.

After you have filled and sealed your canning jars with tomato sauce, it’s time to process them in a water bath canner. Here’s how to do it:

  6. Label and Store: Label each jar with the date and contents, and store them in a cool, dark place. Your canned tomato sauce should last for up to 18 months.
